On Saturday we hosted our second-to-last workshop of the year, this time with Travis Mcconnell of Revival Bar + Kitchen. Travis shared a brief history of charcuterie, as well shared a few of his favorite books on the topic. Travis walked us through three topics essential for home curing: safety, tools and ingredients. The workshop finished with a tasting.
This workshop was the first in a series of charcuterie workshops planned with Travis. In workshops planned for early 2012, Travis will help us explore home curing techniques, and will give curing demonstrations (and hopefully more tastings!).
