What we ate

2 Oct

morning breakfast: coffee and toasted english muffin with butter and fig/pear jam.

Dinner last night: Vietnamese spring rolls…
recipe details to follow soon on meals across america.

One of our favorite quick dinners: spinach lemon orzo soup. The recipe is here.

Spicy daal with wild rice and roasted tomatoes and broiled broccoli.

This is a dinner creation by my intern. Cheese tortellini, roasted brussel sprouts (one of my favorite things!) and chicken with roasted tomatoes, onions, and other ingredients that are escaping my brain at the moment.

We fired up our baby-sized bbq and grilled asparagus, eggplant, zuchinni, bell peppers, and mini spiced burgers. We put feta, green chili, diced onion, cumin and pepper into the patties then grilled for a few minutes on each side.

We topped the burgers with spiced yogurt, and sliced tomato, then used toasted english muffins as buns.
